3-Ingredient Banana Pancakes: Easy, Delicious, and Healthy!

Picture this: You’ve had one of those days where nothing goes right. The kids are cranky, work is overwhelming, and all you want is something to bring a little comfort… Sound familiar?
As someone who’s been on this emotional rollercoaster, I know the urge to dive into a tub of ice cream or a bag of chips when things feel out of control. But I’ve found a way to satisfy those cravings with something just as comforting—and much more nourishing.
3 Ingredients, 10 Minutes, Total Comfort
When those cravings hit, you need something quick and easy. That’s why I’m sharing one of my favorite comfort food recipes: 3-Ingredient Banana Pancakes. They’re naturally sweet, super easy to make, and ready in just 10 minutes!
Banana Pancakes Recipe
Ingredients:
1 ripe banana (the riper, the better!)
2 large eggs
Dash of cinnamon
Optional: maple syrup, nut butter, jam, fresh fruit
Instructions:
Place all ingredients into a blender and blend until smooth.
Heat a non-stick pan over medium heat (4-5 setting on your stove top) and pour about ¼ cup of the batter into the pan.
Cook for around 3-4 minutes until you see small bubbles forming. Flip and cook for another 2 minutes.
Serve hot with your favorite toppings! I love mine with almond butter.
